Our suppliers
Most of the ingredients in PANJANS Kimchi come from Northern Germany. Organic farmer Jens Dohrn grows different varieties of organic Chinese cabbage in Dithmarschen, such as red Chinese cabbage, exclusively for PANJANS. Biolandgut Westhof, which is just around the corner from Jens Dohrn and the KOHLosseum, supplies the carrots.
The rest of the vegetables and fruit come from the organic wholesaler Nabuko from Uelzen, and of course we make sure that we buy as regionally as possible. Our spices are from Biova in Wildberg and we use the particularly pure deep salt from the 500m deep Luisenhaller Saline.
Unique Manufacturing Method
Real fermentation professionals are at work in the historic manufacture of our partner in Wesselburen, the KOHLosseum. Here Hubert Nickels, known as the 'sauerkraut pope', invented the patent for the natural fermentation of vegetables in a glass.
With the help of a self-developed, ventilating special lid, the fermentation gases in the glass can easily leave without air from the outside coming into the glass, which would spoil the vegetables.
Thanks to this process, we can produce probiotic food with no pasteurization needed. In this way, all valuable nutrients, the full taste and the lactic acid bacteria, useful for the intestinal flora, are retained in the PANJANS Kimchi recipes.

Optimal conditions
Dithmarschen on the west coast of Schleswig-Holstein with its offshore Wadden Sea (UNESCO World Heritage) has been known for centuries for its fertile and water-rich marshland. Thanks to the steady westerly winds from the North Sea, plant diseases and plant pests are comparatively low. This results in ideal conditions for organic vegetable growing, even the strongly nutrient-consuming and water-intensive crops cabbage and sugar beet thrive here in high quality.

With Hamburg as the first large marketplace on the doorstep, the perfect setting-up environment for PANJANS Kimchi has resulted in interaction with the local know-how from the KOHLosseum in Wesselburen and the Cocina in Kiel.
