Authentic Asian Food
PANJANS Kimchi was created out of pure passion for authentic Asian cuisine. Our kimchi recipes are based on the Korean cultural treasure that kimchi represents for Koreans.
Buddhism plays a big role in Korea! For our vegan recipe we got inspried by traditional temple kimchi. Other recipe influences come from Ch'ungch'ong Province about a 100km South of the capital Seoul. This rural area is renown for their fish sauce free kimchi recipes.
Patented Production
PANJANS Kimchi is made at the historic workshop of our local partner, the KOHLosseum, in Dithmarschen, Germany, close to the North Sea. Here, over twenty years ago, the late 'sauerkraut pope' Hubert Nickels developed his own, patented process for the natural fermentation of vegetables without the need for pasteurization. The inventor Nickels succeeded in transferring the principle of a traditional fermentation stone pot to commercially available jars by using a special lid developed by him. This quarantees the unique quality of PANJANS Kimchi.
Naturally Fermented
PANJANS Kimchi is made by wild fermentation. We create the perfect conditions for the naturally occurring lactic acid bacteria on the ingredients so that they can produce lactic acid. The acid kills germs and unwanted microorganisms, which represents the actual preservation procress.
This means there is no need for pasteurization! In this way all nutrients, full flavor and lactic acid bacteria, which are valuable for the intestinal flora, are retained.
